Welcome to Eat Well. Live Well. Be Well. I’m Carolyn – the one behind this blog here. I’m loud, energetic, and spur of the moment. A free spirit of sorts… Some found memories include: meeting my hubby a Folk Festival, living among jolly farmers who eat som-tom and sticky rice, dancing through the streets in yellow shirts to the sounds of maw lam music, swimming through mot water at the biggest water festival in the world, scuba diving with sharks in the brightest ocean I’ve ever seen, hiking above the clouds and dancing with the rain storms, mud baths in the Australian forest, hitch hiking with no destination in mind, bike rides to the beach…

…I want nothing more than to live each day, each second, each moment with a smile on my face and happiness in my heart. Oh and a juicy mango in my mouth. Yummy.

    I stumbled upon your blog…we share a similar philosophy on eating well to live well…I’m a registered dietitian in upstate NY…I love to hike and cook…just wanted to say I love your website…

      Thanks for visiting my blog and enjoying my ramblings on living well.

      Where in upstate NY do you live? I used to work for an outdoor education school on Lake George. Nothing was better than taking kids on their first hike and roasting bananas over a camp fire.

    Crazy! We got married on Lake George!! Our reception was at a The Boathouse Restaurant… My husband’s name is Dave as well šŸ™‚ We live 5 minutes from Syracuse…I’m from New Hampshire, but ended up here after I went to Syracuse University. I see you are a runner too—something else we have in common!
    …what brought you to Thailand?

    • First, congrats on your wedding. I bet it was gorgeous at the Boat House. II worked/lived at the Silver Bay YMCA and taught for Nature’s Classroom.

      Yeah, for running… What distance do you like best? After trhying the long distance thing (just to say I’ve done it), I think I prefer the 5k distance. Short and sweet and allows me to do a bunch of different things for ‘training.’

      Thailand…. I was a Peace Corps volunteer!

        Nature’s Classroom sounds amazing…I was a camper and then a counselor at a girls camp in Massachusetts for 13 summers, but we never got to roast bananas! Do you live in the northeast? A few of us did our first high peak last year—only 45 to go! šŸ™‚
        well, have I must say—mud baths in Australia—how cool! Is that the secret to a glowing complexion?! šŸ™‚

        The Peace Corps…that is amazing…I can only imagine the stories you have.

        I agree–I like the shorter distance better (although I’m doing a half marathon in November)…I ran Boston in 08 and 09 (my dad and most of my family live there), but now I’ve been sticking to the short and sweet.

    Amazing story! Are you referring to Aquinnah Cliffs of Martha’s Vineyard…Dave proposed there! I’ve been going to MV for 30 years—every summer of my life! I’ve even lived there for a couple summers in college (worked 3 jobs at a time to afford it, but so worth it!) Ironically enough I was just on line looking on line for a house to rent for a little vaca this summer with my cousin šŸ™‚

    I love your mud bath story…it all starting with a search for shells…
    I’m definitely going to check out Full Moon!

    Hi. and thanks for sharing your blog/thoughts. i bumped into your site from foodgawker.com. First off, i love all your recipes, and secondly, i’m kinda freaked out (and inspired at the same time) at how similar our lives are. I just started triathlons a couple years ago, and i concur when you say they are addicting! ah! In that time, i’ve been moving towards a plant based diet and mostly sticking to it. I had to laugh a little at your description of yourself, because it fits me to a “T”! Other than the meeting your husband at a folk festival part. and i see you’ve been to (or live in) Abbotsford? that’s where i’m from šŸ™‚ anyhoo, thanks for the inspiration. it’s great to meet another ‘free spirit’!
