Chocolate Orange (Birthday) Cake

Yesterday was Dave’s birthday, so Lucky and I woke him up to sing Happy Birthday to him.  I also hid post-it notes around the house, in his computer, sunglass case, journal, etc that told him how much I love him, that I appreciate his hard work, and of course, Happy Birthday.  (And yes, I call him Novio!)

After all this sweetness, Dave told me all he wanted for his birthday was for me not to give him a hard time. Don’t listen to him!   I’m not really that hard on him. You know the typical wifely naggings, “can you put the toilet seat down?,”  “can you close the cabinet doors?,”  “how about you not leave your wet chlorinated towel on our bed?”  etc.

Since Dave just took the leap to start his own law practice, I did get him some gifts for his new office though.  Also, I was a very accommodating wife for the day! Toilet seat up– no problem.    Crumbs on the counter – sure I’ll pick them up.

[Shameless plug] Speaking of new law practice, if you are in the Tampa area and need a Board Certified Criminal Trial Attorney (that means he is an expert folks!), then let me know.  I’ll put you in contact with Dave.  His website should be up and running soon.  He is fluent in Spanish and also does estate planning and personal injury.   Dave has had quite the diverse career – BA in Psychology, Masters in Education, Taught at a prison, Law School, Peace Corps volunteer, Spanish Teacher,  Medical Malpractice/Personal Injury attorney, Assistant State Prosecutor, and now…. The Hardy Law Firm).  [/Shameless plug]  I guess you can say I’m very proud of my husband!

Now onto his birthday cake.

I used this Chocolate-Orange Cake recipe from SusanV’s The Fatfree Vegan Kitchen.  If you haven’t checked out her blog, she has some great recipes that won’t break your daily calorie allowance.

Chocolate-Orange Cake
from SusanV’s The Fatfree Vegan Kitchen

1 1/2 cups unbleached flour
1 1/2 cups whole wheat flour
1 1/2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
1/2 cup cocoa
1 teaspoon cinnamon
3/4 cup soy yogurt
1 teaspoon vanilla
2 tablespoons balsamic vinegar
1 1/2 cups water
1/2 cup fresh orange juice
2 tablespoons grated orange peel

Chocolate Icing:
1/2 cup powdered sugar
1 tablespoon cocoa
2 teaspoons orange juice
1/4 teaspoon vanilla extract (I used almond extract)
–plus extra orange juice as needed

Orange Icing:
1/2 cup powdered sugar
1 teaspoon orange juice
1/4 teaspoon vanilla extract (I used almond extract)
–plus extra orange juice as needed

Spray a Bundt cake pan with non-stick spray and dust it lightly with unsweetened cocoa. Preheat oven to 350F.

Combine the flours, sugar, baking soda, salt, cocoa, and cinnamon in a large mixing bowl. Add the yogurt, vanilla, balsamic vinegar, water, and orange juice. Beat by hand or with a mixer on low speed just until well-combined, about 1-2 minutes. Stir in the grated orange peel, and pour into the prepared pan.

Bake for about 30-40 minutes, until a toothpick inserted in the middle comes out clean. Cool in the pan for 10 minutes and then invert it onto a serving platter and cool completely.

When the cake is cool, make the icings. For each icing, mix the ingredients in separate small bowls. One half teaspoon at a time, stir in enough extra orange juice to make a drizzling consistency. Drizzle the chocolate icing over the cake, wait a few minutes for it to set, and then drizzle the orange icing.

Makes 16 servings. With icing, as shown: 198 Calories (kcal); 1g Total Fat; (3% calories from fat); 4g Protein; 47g Carbohydrate; 0mg Cholesterol; 294mg Sodium; 3g Fiber.

Eat well,

    Happy Belated Birthday to Dave!

What a sweet Wifey you are, not harassing him about the toilet seat, and various other things.
